Shiitake Snow Pea Stir-Fry Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon canola or grapeseed oil
  • 1 garlic clove, minced
  • 2 teaspoons grated fresh ginger
  • 6 shiitake mushroom caps, lightly rinsed, patted dry and cut into 1/4-inch strips
  • 1 red bell pepper, cut into 1/4-inch slices
  • 8 ounces snow peas, trimmed
  • 1/2 teaspoon crushed red pepper
  • 1 tablespoon toasted sesame seeds, garnish

Method

  1. In a small bowl, combine the soy sauce, sesame oil, sugar and cornstarch and set aside
  2. In large skillet, heat the canola oil over medium heat
  3. Add the garlic, ginger, mushrooms, bell pepper, snow peas and crushed red pepper and stir-fry 2 to 3 minutes
  4. Add the sauce and cook until hot, 2 to 3 minutes longer
  5. Garnish with sesame seeds and serve
