Ingredients
Makes 4 servings
- 1 medium head escarole, leaves separated
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon capers
- salt and freshly ground black pepper
Method
- In a saucepan of boiling salted water, cook the escarole leaves until tender, for 5 minutes
- Drain and run under cold water
- Coarsely chop and set aside
- In a large skillet, heat the oil over medium heat
- Add the garlic and cook for 30 seconds
- Stir in the capers, then add the chopped escarole and season with salt and pepper to taste
- Cook, stirring, until the flavors are well blended and the mixture is hot, about 5 minutes
- Serve immediately
