Ingredients
Makes 4 servings
- 1 medium head cauliflower
- 2 tablespoons olive oil
- salt and freshly ground black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons capers
Method
- Preheat the oven to 425°F
- Lightly oil a baking sheet and set aside
- Remove the core and leaves from the cauliflower, then use a large serrated knife to cut the head lengthwise into 1/2-inch slices
- Arrange the sliced cauliflower in a single layer on the prepared baking sheet
- Drizzle with olive oil and season with salt and pepper to taste
- Roast the cauliflower until it is tender and slightly browned, turning once, about 15 minutes
- During the last 5 minutes of cooking time, sprinkle with lemon juice and capers
- Serve immediately
