Ashkenazi Tzimmes Recipe

Ingredients

Makes 4 to 6 servings

  • 1 tablespoon canola or grapeseed oil
  • 1 pound carrots, shredded
  • 1 medium sweet potato, peeled and shredded
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 cup fresh orange juice
  • 1 cup finely chopped drained canned or fresh pineapple
  • 1/2 cup golden raisins
  • ¾ teaspoon ground cinnamon

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9-inch square baking pan and set aside
  3. In a large saucepan, heat the oil over low heat
  4. Add the carrots, sweet potato, sugar and salt
  5. Cover and cook, stirring occasionally, for 10 minutes
  6. Spoon the mixture into the prepared pan
  7. Stir in the orange juice, pineapple, raisins and cinnamon and mix well
  8. Cover tightly with foil and bake until tender, about 45 minutes
  9. Serve immediately
