Ingredients
Makes 4 to 6 servings
- 1 tablespoon canola or grapeseed oil
- 1 pound carrots, shredded
- 1 medium sweet potato, peeled and shredded
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1/4 cup fresh orange juice
- 1 cup finely chopped drained canned or fresh pineapple
- 1/2 cup golden raisins
- ¾ teaspoon ground cinnamon
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch square baking pan and set aside
- In a large saucepan, heat the oil over low heat
- Add the carrots, sweet potato, sugar and salt
- Cover and cook, stirring occasionally, for 10 minutes
- Spoon the mixture into the prepared pan
- Stir in the orange juice, pineapple, raisins and cinnamon and mix well
- Cover tightly with foil and bake until tender, about 45 minutes
- Serve immediately
