Ingredients
Makes 4 servings
- 4 large sweet potatoes, unpeeled
- 1 tablespoon olive oil
- 1/2 cup minced red onion
- 1/2 cup chopped walnuts
- 1/2 cup sweetened dried cranberries
- 1 tablespoon vegan margarine
- 1 tablespoon pure maple syrup
- salt
- 1/4 teaspoon freshly ground black pepper
- 2 teaspoons walnut oil (optional)
Method
- Preheat the oven to 425°F
- Lightly oil a baking sheet and set aside
- Pierce the potatoes with a fork and bake until soft, about 1 hour
- When cool enough to handle, cut the potatoes in half lengthwise and, leaving the shells and 1/4-inch-wide perimeter of the flesh intact, scoop out the middle of the potatoes and place them in a bowl
- Mash well and set aside
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until softened, about 5 minutes
- Stir in the walnuts, cranberries and margarine
- Add the mixture to the mashed sweet potatoes
- Add the maple syrup and season with salt and pepper to taste
- Mix well to combine
- Fill the potato shells with the filling and arrange on a baking sheet
- Bake until the potatoes are heated through, about 15 minutes
- Drizzle each potato with a little walnut oil, if using
- Serve immediately
