Vegan Spinach Souffle Recipe

Ingredients

Makes 4 servings

  • 4 tablespoons olive oil
  • 1 medium yellow onion, minced
  • 4 cups fresh baby spinach
  • salt and freshly ground black pepper
  • 1 pound firm tofu, drained
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¾ cup vegetable broth or water
  • 2 tablespoons soy sauce

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 3 quart-casserole or round baking dish and set aside
  3. In a large skillet, heat 1 tablespoon oil over medium heat
  4. Add the onion, cover and cook until soft, about 10 minutes
  5. Stir in the spinach and season with salt and pepper to taste
  6. Cover and cook until the spinach is wilted, about 3 minutes
  7. Set aside
  8. In a food processor, combine the tofu and the onion and spinach mixture and process until blended
  9. Add the flour, baking powder, broth, soy sauce and remaining 3 tablespoons oil and process until smooth
  10. Scrape the mixture into the prepared casserole and bake until firm, about 60 minutes
  11. Serve immediately
