Ingredients
Makes 4 servings
- 1/4 cup unsalted shelled sunflower seeds
- 1/4 cup unsalted shelled pumpkin seeds (pepitas)
- 1/4 cup sesame seeds
- ¾ cup all-purpose flour
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound seitan cut into bite-size pieces
- 2 tablespoons olive oil
Method
- In a food processor, combine the sunflower seeds, pumpkin seeds and sesame seeds and grind toa powder
- Transfer to a shallow bowl, add the flour, coriander, paprika, salt and pepper and stir to combine
- Moisten the seitan pieces with water, then dredge in the seed mixture to coat completely
- In a large skillet, heat the oil over medium heat
- Add the seitan and cook until lightly browned and crispy on both sides
- Serve immediately
