Pan-Seared Seitan With Artichokes Olives Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 pound seitan cut into 1/4-inch slices
  • 2 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1 1/2 cups canned or frozen (cooked) artichoke hearts, cut into 1/4-inch slices
  • 1/3 cup oil-cured black olives, pitted and halved
  • 1 tablespoon capers
  • 3 tablespoons chopped fresh parsley
  • salt and freshly ground black pepper
  • 1 cup Tofu Feta (optional)

Method

  1. Preheat oven to 250°F
  2. In a large skillet, heat 1 tablespoon of the oil over medium-high heat
  3. Add the seitan and brown on both sides, about 5 minutes
  4. Transfer the seitan to a heatproof platter and keep warm in the oven
  5. In same skillet, heat the remaining 1 tablespoon oil over medium heat
  6. Add the garlic and cook until fragrant, about 30 seconds
  7. Add the tomatoes, artichoke hearts, olives, capers and parsley
  8. Season with salt and pepper to taste and cook until hot, about 5 minutes
  9. Set aside
  10. Place the seitan on a serving platter, top with the vegetable mixture and sprinkle with tofu feta, if using
  11. Serve immediately
