Ingredients
Makes 4 servings
- 1/3 cup sesame seeds
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup plain unsweetened soy milk
- 1 pound seitan, cut into 1/4-inch slices
- 2 tablespoons olive oil
Method
- Place the sesame seeds in a dry skillet over medium heat and toast until light golden, stirring constantly, 3 to 4 minutes
- Set aside to cool, then grind them in a food processor or spice grinder
- Place the ground sesame seeds in a shallow bowl and add the flour, salt and pepper and mix well
- Place the soy milk in a shallow bowl
- Dip the seitan in the soy milk, then dredge it in the sesame mixture
- In a large skillet, heat the oil over medium heat
- Add the seitan, in batches if necessary and cook until crisp and golden brown on both sides, about 10 minutes
- Serve immediately
