Ingredients
Makes 4 servings
- 2 cups panko
- 1/4 cup minced fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 pound seitan cut 1/4-inch slices
- 2 tablespoons olive oil
- 1 lemon, cut into wedges
Method
- Preheat the oven to 250°F
- In a large bowl, combine the panko, parsley, salt and pepper
- Moisten the seitan with a little water and dredge it in the panko mixture
- In a large skillet, heat the oil over medium-high heat
- Add the seitan and cook, turning once, until golden brown, working in batches, if necessary
- Transfer the cooked seitan to a baking sheet and keep warm in the oven while you cook the rest
- Serve immediately, with lemon wedges
