Vegetarian Meat Loaf Special Recipe

Ingredients

Makes 4 to 6 servings

  • 2 tablespoons olive oil
  • 2/3 cup minced onion
  • 2 garlic cloves, minced
  • 1 pound extra-firm tofu, drained and patted dry
  • 3 tablespoons ketchup
  • 2 tablespoons tahini (sesame paste) or creamy peanut butter
  • 2 tablespoons soy sauce
  • 1/2 cup ground walnuts
  • ¾ cup old-fashioned oats
  • ¾ cup wheat gluten flour (vital wheat gluten)
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon freshly ground black pepper

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a 9-inch loaf pan and set aside
  3. In a large skillet, heat 1tablespoon of the oil over medium heat
  4. Add the onion and garlic, cover and cook until softened, 5 minutes
  5. In a food processor, combine the tofu, ketchup, tahini and soy sauce and process until smooth
  6. Add the reserved onion mixture and all the remaining ingredients
  7. Pulse until well combined, but with some texture remaining
  8. Scrape the mixture into the prepared pan
  9. Press the mixture firmly into the pan, smoothing the top
  10. Bake until firm and golden brown, about 1 hour
  11. Let stand for 10 minutes before slicing
