Ingredients
Makes 4 to 6 servings
- 2 tablespoons olive oil
- 2/3 cup minced onion
- 2 garlic cloves, minced
- 1 pound extra-firm tofu, drained and patted dry
- 3 tablespoons ketchup
- 2 tablespoons tahini (sesame paste) or creamy peanut butter
- 2 tablespoons soy sauce
- 1/2 cup ground walnuts
- ¾ cup old-fashioned oats
- ¾ cup wheat gluten flour (vital wheat gluten)
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon sweet paprika
- 1/4 teaspoon freshly ground black pepper
Method
- Preheat the oven to 375°F
- Lightly oil a 9-inch loaf pan and set aside
- In a large skillet, heat 1tablespoon of the oil over medium heat
- Add the onion and garlic, cover and cook until softened, 5 minutes
- In a food processor, combine the tofu, ketchup, tahini and soy sauce and process until smooth
- Add the reserved onion mixture and all the remaining ingredients
- Pulse until well combined, but with some texture remaining
- Scrape the mixture into the prepared pan
- Press the mixture firmly into the pan, smoothing the top
- Bake until firm and golden brown, about 1 hour
- Let stand for 10 minutes before slicing
