Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 1 (16-ounce) package extra-firm tofu, drained, cut into 1/2-inch slices
- salt
- 4 garlic cloves, minced
- 1 (14.5-ounce) can diced tomatoes, drained
- 1/4 cup oil-packed sun-dried tomatoes, cut into 1/4-inch strips
- 1/4 cup pitted kalamata olives, halved
- 1 tablespoon capers
- 1 teaspoon dried oregano
- 1/2 teaspoon sugar
- freshly ground black pepper
- 2 tablespoons minced fresh parsley, for garnish
Method
- Preheat the oven to 275°F
- In a large skillet, heat 1 tablespoon of the oil over medium heat
- Add the tofu and cook until golden brown on both sides, turning once, about 5 minutes per side
- Sprinkle the tofu with salt to taste
- Transfer the fried tofu to a heatproof platter and keep warm in the oven
- In the same skillet, heat the remaining 1 tablespoon oil over medium heat
- Add the garlic and cook until softened, about 1 minute
- Do not brown
- Stir in the diced tomatoes, sun-dried tomatoes, olives and capers
- Add the oregano, sugar and salt and pepper to taste
- Simmer until the sauce is hot and the flavors are well combined, about 10 minutes
- Top the fried tofu slices with the sauce and sprinkle with the parsley
- Serve immediately
