Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium sweet yellow onion, finely chopped
- 1 small green bell pepper, finely chopped
- 1 celery rib, minced
- 2 garlic cloves, minced
- 1 jalapeno or serrano chile, seeded and minced
- 1 (28-ounce) can diced tomatoes, drained
- 3 cups cooked or 2 (15.5-ounce) cans dark kidney beans, drained
- 1 1/2 cups long-grain white rice
- 3 cups vegetable broth
- 1 teaspoon Tabasco sauce, or to taste
- 1 teaspoon dried thyme
- 1/2 teaspoon ground cumin
- 1/4 teaspoon file powder
- salt
- ground cayenne
Method
- In a large saucepan, heat the oil over medium heat
- Add the onion, bell pepper, celery and garlic
- Cover and cook until softened, about 10 minutes
- Stir in the jalapeno, tomatoes, beans, rice, broth, Tabasco sauce, thyme, cumin, file powder, salt and cayenne
- Cover and simmer until the rice is tender and liquid is absorbed, about 30 minutes
- Taste, adjusting seasonings if necessary
- Serve immediately
