Creole Rice Red Beans Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium sweet yellow onion, finely chopped
  • 1 small green bell pepper, finely chopped
  • 1 celery rib, minced
  • 2 garlic cloves, minced
  • 1 jalapeno or serrano chile, seeded and minced
  • 1 (28-ounce) can diced tomatoes, drained
  • 3 cups cooked or 2 (15.5-ounce) cans dark kidney beans, drained
  • 1 1/2 cups long-grain white rice
  • 3 cups vegetable broth
  • 1 teaspoon Tabasco sauce, or to taste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon file powder
  • salt
  • ground cayenne

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, bell pepper, celery and garlic
  3. Cover and cook until softened, about 10 minutes
  4. Stir in the jalapeno, tomatoes, beans, rice, broth, Tabasco sauce, thyme, cumin, file powder, salt and cayenne
  5. Cover and simmer until the rice is tender and liquid is absorbed, about 30 minutes
  6. Taste, adjusting seasonings if necessary
  7. Serve immediately
