Ingredients
Makes 4 servings
- 1 large head bok choy, cut crosswise into 1/4-inch slices
- 12 ounces udon noodles
- 1 tablespoon toasted sesame oil
- 2 tablespoons tahini (sesame paste)
- 3 tablespoons soy sauce
- 2 tablespoons water
- 1 tablespoon mirin
- 2 tablespoons canola or grapeseed oil
- 1/2 cup thinly sliced shallots
- 1 tablespoon grated fresh ginger
- 1/4 teaspoon crushed red pepper
- 1 tablespoon toasted sesame seeds
Method
- Lightly steam the bok choy until just tender, about 3 minutes
- Set aside
- Cook the udon in a pot of boiling water until tender, stirring occasionally, 6 to 7 minutes
- Drain, rinse under cold water and place in a bowl
- Toss with sesame oil and set aside
- In a small bowl, combine the tahini, soy sauce, water and mirin, stirring to blend well
- Set aside
- Heat 1 tablespoon of the canola oil in skillet or wok over medium-high heat
- Add the shallots, ginger and crushed red pepper and stir for 1 minute
- Add the reserved bok choy, noodles and sauce
- Cook, stirring, until hot, 5 to 7 minutes
- Serve at once sprinkled with sesame seeds
