Ingredients
Makes 4 servings
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 1/2 cups cooked or 1 can cannellini beans, drained and rinsed
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- salt and freshly ground black pepper
- 1 pound linguine
- 3 tablespoons minced fresh parsley
Method
- In large skillet, heat the oil over medium heat
- Add the garlic and cook until fragrant, about 30seconds
- Add the beans, lemon juice, oregano, basil and salt and pepper to taste and cook until heated through, about 5 minutes
- Keep warm over low heat
- In a large pot of boiling salted water, cook the linguine over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well, reserving 1/3 cup of the pasta water
- Transfer pasta to a large serving bowl
- Mix the reserved pasta water into the bean mixture to make a smooth sauce
- Add the bean mixture to the pasta along with the parsley and toss gently to combine
- Serve immediately
