Fettuccine With Chard Red Lentil Tomato Sauce Recipe

Ingredients

Makes 4 servings

  • 1/2 cup red lentils, picked over, rinsed and drained
  • 1 medium bunch Swiss chard, tough stems removed and cut into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 2 garlic cloves, sliced
  • 1/2 teaspoon crushed red pepper
  • 1 (28-ounce) can crushed tomatoes
  • salt and freshly ground black pepper
  • 1 pound linguine

Method

  1. Bring a small saucepan of salted water to boil over high heat
  2. Add the lentils, return to a boil, then reduce heat to low
  3. Cover and cook until softened, about 30 minutes
  4. Drain and set aside
  5. In a large saucepan of boiling water, cook the chard until just tender, about 3 minutes
  6. Drain and set aside
  7. In a large skillet, heat the oil over medium heat
  8. Add the garlic and cook until fragrant, about 30seconds
  9. Add the crushed red pepper, tomatoes, the cooked lentils and the cooked chard
  10. Reduce the heat to low, season with salt and pepper to taste and simmer for 10 minutes to incorporate the flavors
  11. In a large pot of boiling salted water, cook the linguine over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  12. Drain well and transfer to a large serving bowl
  13. Add the sauce and toss gently to combine
  14. Serve immediately
