Vegan Matzo Balls Recipe

Ingredients

Makes about 12 matzo balls

  • 1 cup matzo meal
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup crumbled drained firm tofu
  • 1/3 cup vegetable broth or water
  • 2 tablespoons fresh minced dillweed
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup olive oil

Method

  1. In a medium bowl, combine the matzo meal, onion powder, salt and pepper
  2. Set aside
  3. In a food processor, combine the tofu, broth, dill, parsley and oil and puree
  4. Stir the tofu mixture into the matzo mixture and blend well
  5. Cover the bowl and refrigerate for 1 hour or overnight
  6. Preheat the oven to 375°F
  7. Lightly oil a baking sheet and set aside
  8. Divide the matzo mixture into12 equal portions
  9. Use your hands to form the mixture into tightly packed balls and arrange on the oiled baking sheet
  10. Cover tightly with foil and bake for about 30 minutes
  11. Set aside to cool
  12. Serve warm
