Ingredients
Makes 4 wraps
- 1 pound extra-firm tofu, drained, patted dry and cut in 1/2-inch dice
- 2 firm crisp apples, such as Gala or Fuji, cored and chopped
- 2 celery ribs, minced
- 1/3 minced red onion
- 1/3 cup chopped walnuts, toasted
- 2 tablespoons chopped fresh parsley
- 1/2 cup vegan mayonnaise
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 (10-inch) flour tortillas or lavash flatbread
- 4 lettuce leaves
Method
- In a large bowl, combine the tofu, apples, celery, onion, walnuts and parsley
- Add the mayonnaise, lemon juice, sugar, salt and pepper, stirring well to combine
- To assemble wraps, lay 1 tortilla on a work surface
- Spread about 1/2 cup of the tofu mixture across the tortilla and top with a lettuce leaf
- Roll up tightly and cut in half diagonally
- Repeat with the remaining ingredients and serve
