Ingredients
Makes 4 wraps
- 1 1/2 cups cooked or 1 cans chickpeas, drained and rinsed
- 1/2 cup oil-packed sun-dried tomatoes, drained*
- 1 celery rib, minced
- 1/4 cup minced red onion
- 3 tablespoons chopped fresh parsley
- 1/2 cup vegan mayonnaise
- 1 tablespoon spicy brown mustard
- salt and freshly ground black pepper
- 4 (10-inch) flour tortillas or lavash flatbread
- 4 lettuce leaves
Method
- Mash the chickpeas in a large bowl
- Cut the tomatoes into 1/4-inch pieces and add to the chickpeas along with the celery, onion and parsley
- Add the mayonnaise, mustard and salt and pepper to taste, stirring to mix well
- To assemble wraps, place 1 tortilla on a work surface and spread about 1/2 cup of the chickpea mixture across the surface
- Top with a lettuce leaf
- Roll up tightly and cut in half diagonally
- Repeat with the remaining ingredients and serve
