Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 3 cups chopped seitan
- ¾ cup chopped toasted walnuts
- 2 celery ribs, finely chopped
- 1/3 cup shredded carrot
- 3 tablespoons minced green onions
- 1/4 cup golden raisins
- 1/3 cup vegan mayonnaise
- 1/3 cup plain vegan yogurt
- 2 teaspoons hot or mild curry powder
- 1/2 teaspoon salt
Method
- In a large skillet, heat the oil over medium heat
- Add the seitan and cook until browned, about 7minutes
- Transfer to a large bowl
- Add the walnuts, celery, carrot, green onions and raisins
- In a small bowl, combine the mayonnaise, yogurt, curry powder and salt
- Taste, adjusting seasonings if necessary, adding more curry powder if desired
- Add the dressing to the salad, toss to combine and serve
