Curried Walnut Chicken Salad Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 3 cups chopped seitan
  • ¾ cup chopped toasted walnuts
  • 2 celery ribs, finely chopped
  • 1/3 cup shredded carrot
  • 3 tablespoons minced green onions
  • 1/4 cup golden raisins
  • 1/3 cup vegan mayonnaise
  • 1/3 cup plain vegan yogurt
  • 2 teaspoons hot or mild curry powder
  • 1/2 teaspoon salt

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the seitan and cook until browned, about 7minutes
  3. Transfer to a large bowl
  4. Add the walnuts, celery, carrot, green onions and raisins
  5. In a small bowl, combine the mayonnaise, yogurt, curry powder and salt
  6. Taste, adjusting seasonings if necessary, adding more curry powder if desired
  7. Add the dressing to the salad, toss to combine and serve
