Ingredients
Makes 4 to 6 servings
- 2 cups fresh baby spinach
- 2 cups finely chopped napa cabbage
- 1 cup chopped white or shiitake mushrooms
- 1/2 cup shredded carrot
- 1/4 cup minced green onions
- 1 garlic clove, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon toasted sesame oil ¾ teaspoon cornstarch
- 1/2 teaspoon salt
- 16 to 20 Vegan Wonton Wrappers
Method
- Steam the spinach, cabbage, mushrooms and carrot just long enough to soften, about 2 minutes
- Blot dry to remove any liquid
- Transfer the vegetables to a food processor and add the green onions, garlic, ginger, sesame oil, cornstarch and salt
- Process until well combined
- Working with 1 wonton wrapper at a time, place on a work surface and spoon 1 tablespoon of the filling mixture onto the wrapper
- Fold the wrapper over the filling to form a semicircle
- Moisten the edges of the wrapper with water to seal
- Repeat with the remaining wrappers and filling
- Steam the dumplings until cooked through, about 10 minutes
- Serve immediately
