Ingredients
- 8 fresh sardines, scaled and gutted
- spanish extra-virgin olive oil
- sea salt to taste
Method
- Brush the sardines lightly with olive oil and season with salt
- Lay the sardines on a grill over hot charcoals or a high flame and cook for 1 to 2 minutes on each side
- Transfer to a platter and garnish with more salt and a drizzle of olive oil
- If you want to fillet the sardines before serving, hold the sardine with its belly flat on the platter
- With your other hand, pinch the tail and pull up toward the head
- The spine and bones should pull out easily, leaving two fillets
