Squid Sandwich With Garlic Mayonnaise Spanish Recipe

Ingredients

  • 3 tablespoons Spanish extra-virgin olive oil
  • ½ large onion, thinly sliced
  • sea salt to taste
  • 4 6-inch-long sandwich rolls
  • 1 pound fresh small squid, bodies and tentacles separated
  • 4 cups olive oil
  • 2 cups all-purpose flour
  • 4 tablespoons allioli

Method

  1. Heat 3 tablespoons of olive oil in a small saute pan over low heat
  2. Add the onion and cook slowly until golden brown, about 20 minutes
  3. Add 1 tablespoon water if the onion starts to stick or burn
  4. Season to taste with salt and cool to room temperature
  5. Preheat oven to 350°F
  6. Slice open the rolls, being careful not to cut all the way through
  7. Lay them open on a baking sheet and toast lightly
  8. With a sharp knife, cut the squid bodies into 1-inch rings
  9. Heat 4 cups of olive oil in a deep pot over medium heat until it measures 350°F on a candy thermometer
  10. Put the flour in a large mixing bowl and season with salt
  11. Add the squid rings and tentacles and coat with the flour
  12. Drop the floured squid into a mesh strainer or colander and shake gently to knock off any excess flour
  13. Working in batches, fry the squid in the hot oil until golden, about 45 seconds
  14. Transfer to a paper towel-lined plate with a slotted spoon and drain
  15. Allow the oil to return to 350°F between batches
  16. Spread ½ tablespoon of allioli on each side of the toasted rolls
  17. Spoon the caramelized onions on one side of each roll
  18. Fill each roll with fried squid and serve immediately
