Ingredients
- 1 orange
- 1 lemon
- 5 garlic cloves
- 4 cups fresh cherries, stemmed and pitted
- leaves from 4 fresh rosemary sprigs
- leaves from 6 fresh thyme sprigs
- 1 bay leaf
- ½ cup Spanish extra-virgin olive oil
- ¼ cup Spanish aged sherry vinegar
- ¼ teaspoon coarse sea salt
Method
- Using a vegetable peeler, remove half of the zest from the orange and the lemon
- Split the garlic cloves by placing them on a cutting board and pressing down hard with the flat side of a kitchen knife
- Combine the garlic, cherries, lemon and orange zest, rosemary, thyme, bay leaf, olive oil, vinegar, and salt in a mixing bowl
- Cover with plastic wrap and marinate for 4 hours at room temperature or overnight in the refrigerator
- Allow refrigerated cherries to come to room temperature before serving
