Cherries And Orange Spanish Recipe

Ingredients

  • 1 orange
  • 1 lemon
  • 5 garlic cloves
  • 4 cups fresh cherries, stemmed and pitted
  • leaves from 4 fresh rosemary sprigs
  • leaves from 6 fresh thyme sprigs
  • 1 bay leaf
  • ½ cup Spanish extra-virgin olive oil
  • ¼ cup Spanish aged sherry vinegar
  • ¼ teaspoon coarse sea salt

Method

  1. Using a vegetable peeler, remove half of the zest from the orange and the lemon
  2. Split the garlic cloves by placing them on a cutting board and pressing down hard with the flat side of a kitchen knife
  3. Combine the garlic, cherries, lemon and orange zest, rosemary, thyme, bay leaf, olive oil, vinegar, and salt in a mixing bowl
  4. Cover with plastic wrap and marinate for 4 hours at room temperature or overnight in the refrigerator
  5. Allow refrigerated cherries to come to room temperature before serving
