Indian Fish Saag With Coconut Milk Slow Cooker Recipe

Ingredients

Pressure/Manual (High) Natural/Quick Release

For the sauce

  • 1 cup chopped yellow onions
  • 1 cup chopped tomatoes
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon ground turmeric
  • 1 teaspoon Garam Masala
  • ½ to 1 teaspoon cayenne pepper
  • ¼ cup water
  • 2 cups thawed frozen chopped spinach

For the fish

  • 1 pound frozen haddock fillets (½ inch thick), partially thawed and cut into bite-size pieces (see Note)
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • hot cooked rice, naan, cauliflower rice, or zoodles, for serving

Method

For the sauce

  1. In a blender, combine the onions, tomatoes, ½ cup of the coconut milk, the ginger, and garlic and blend until smooth
  2. Pour the sauce into the Instant Pot
  3. Stir in the salt, turmeric, garam masala, and cayenne
  4. Pour the water into the blender jar and swirl it to dissolve any remaining sauce, then pour it into the pot
  5. Stir in the spinach
  6. Place a steamer rack in the pot

For the fish

  1. Place the fish in a medium bowl
  2. Add the oil, turmeric, and salt
  3. Toss to coat
  4. Place the fish on a sheet of aluminum foil large enough to completely enclose it
  5. Bring the edges of the foil together and crimp tightly to seal
  6. Place the packet on top of the steamer rack
  7. Secure the lid on the pot
  8. Close the pressure-release valve
  9. Select MANUAL and set the pot at HIGH pressure for 5 minutes
  10. At the end of the cooking time, allow the pot to sit undisturbed for 5 minutes, then release any remaining pressure
  11. Carefully remove the packet of fish and open one side of it
  12. Pour all the cooking liquid from the packet into the pot
  13. Set the packet aside
  14. Add the remaining coconut milk to the pot
  15. Stir until well combined
  16. Gently add the fish to the pot and very gently stir to combine
  17. Serve with rice, naan, cauliflower rice, or zoodles
