Recipe for Pollo con Salsa Roja
Serves 8
Active Time 10 minutes
Saute; Pressure/Manual (High) Natural/Quick Release
- 4½ teaspoons ground cumin
- 4½ teaspoons chili powder
- 1 tablespoon salt
- 2 pounds boneless, skinless chicken thighs, cut into bite-size pieces
- 2 tablespoons vegetable oil
- 1 (14-ounce) can diced tomatoes, undrained
- 1 small white onion, chopped
- 1 (5-ounce) can tomato paste
- ¼ cup pickled jalapenos, drained
- 3 garlic cloves, minced
Method
- In a small bowl, combine the cumin, chili powder, and salt
- Place the chicken in a large bowl
- Sprinkle the chicken with the spice mixture
- Toss well to coat
- Select SAUTE on the Instant Pot
- When the pot is hot, add the oil
- When the oil is hot, add the chicken
- Cook, stirring, until the chicken is lightly browned, 4 to 5 minutes
- Select CANCEL
- Add the diced tomatoes and their juices, onion, tomato paste, jalapenos, and garlic to the pot
- Stir to combine
- Secure the lid on the pot
- Close the pressure-release valve
- Select MANUAL and set the pot at HIGH pressure for 15 minutes
- At the end of the cooking time, allow the pot to sit undisturbed for 10 minutes, then release any remaining pressure
- Serve with tortillas, sour cream, and guacamole, or over zucchini noodles
