Ingredients
Chicken:
- 3 lbs. boneless, skinless chicken thighs or breasts
- sea salt – to taste.
- freshly ground black pepper – to taste
- 1 yellow onion, small, peeled and roughly chopped
- 3 garlic cloves
- 1/2 cup raw honey
- 1/3 cup Paleo ketchup
- 1/2 cup coconut aminos
- 2 tbsp toasted sesame oil
- 1/4 tsp crushed red pepper
- 1 tbsp arrowroot powder (optional)
Veggies:
- 1 bunch rainbow chard, cut lengthwise into one-inch ribbons
- 2 cups broccoli, cut into bite-sized pieces
- 1 red bell pepper, cored and thinly sliced lengthwise
- 1 tbsp coconut oil
- 1 tsp coconut aminos
- 1/2 tsp toasted sesame oil
- sea salt – to taste.
- freshly ground black pepper – to taste garnish:
- 1 tsp sesame seeds
- 3-4 green onions, thinly sliced
Method
- Season the chicken with salt and pepper and place in a crock pot
- Place all the other chicken ingredients except the arrowroot powder in the food processor and pulse until the liquid ingredients are well combined
- Pour the mixture over the chicken in the crock pot and cook for 3 hours on low
- Remove and shred the chicken
- Whisk the arrowroot powder in the broth that’s left in the crock pot and cook for 5 minutes
- Add the chicken back to it and mix
For the veggies, put coconut oil in a skillet and saute the veggies till the bell pepper and broccoli is tender and chard is wilted
- Add the remaining ingredients and mix
- Place the veggies in a serving tray and place the chicken mixture on top of it
- Garnish with sesame seeds and green onion
