Ingredients
- 1 lb. chicken thighs, boneless and skinless
- 1 medium white onion, sliced
- 2 medium sweet potatoes, peeled and diced
- 2 medium apples, peeled and diced
- 3/4 cup fresh cranberries
- 2 tbsp olive oil
- 3 tsp maple syrup
- 1 tsp pumpkin pie spice
- extra dash nutmeg.
- dash of salt.
- dash of pepper.
Method
- Add some olive oil to the crock pot
- Place the chicken in the crock pot and add the maple syrup and spices to it
- Add the sweet potatoes, apples, onion and cranberries to the crock pot
- Cook for 4-5 hours on low
- Mix well using a spoon and then cook again for around 30 minutes
