Ingredients
- 1 whole chicken
- 2-3 medium/large peaches, grilled
- 3 tbsp coconut oil
- 1 tbsp crushed red pepper
- ½ cup balsamic vinegar
- sea salt and black pepper, to taste.
Method
- Season the chicken with salt and pepper, including within the chicken cavity
- Add a tbsp of red pepper flakes with 2 tbsp coconut oil and mix well, and apply it to the chicken
- Place the chicken in the crock pot and cook for 4-6 hours on low
- Remove the chicken and place aside
- Put balsamic vinegar in a small pot and boil, reduce the flame and simmer until it thickens slightly, stirring continuously
- Shred the chicken
- Quarter the grilled peaches
- Serve the chicken with the grilled peaches
