Ingredients
- 2 cups mild or medium salsa, simmered to reduce to 1 cup
- 4 boneless, skinless chicken breasts, trimmed and cut in half lengthwise
- salt and fresh ground black pepper, for seasoning chicken
- 2 tbsp fresh-squeezed lime juice (or less if you’re not that into lime)
- 1 cup grated low-fat Mozzarella
Method
- Remove unnecessary and extra fat from the meat and slice each piece into half
- Spray the crock pot with a non-stick spray and lay the chicken pieces seasoned with salt and pepper in a crock pot
- Add the lime juice to the reduced 1 cup of simmering salsa and pour the warm mixture over the meat
- Cook for about 60-90 minutes on high until the chicken is cooked but not too tender
- Spray a casserole dish with a cooking spray and arrange the chicken in the dish
- Spread the chunky parts of the salsa over the chicken
- Sprinkle about 1 cup of the Mozzarella over the meat and place the dish under the preheated broiler
- Leave the dish for about 5 minutes until the cheese melts and become a bubbly brown
- Serve warm with sour cream
