Ingredients
- 2 lbs. boneless, skinless chicken breasts
- 1 packet Italian dressing mix
- 1/2 cup water
- 1 (8-oz.) package reduced-fat cream cheese
- 1 can 98% fat free cream of chicken soup
- 3 cups cooked long grain rice (white or brown)
Method
- In a crock pot, add the chicken
- In a bowl, mix the water and Italian dressing together; pour over the chicken on the pot
- Cover and cook; 4 to 4 ½ hours on a high heat setting, 8 to 8 ½ hours on a low heat setting
- In a bowl, mix the chicken soup and cream cheese
- Remove the chicken from the crock pot and place on a dish carefully
- Pour the chicken soup mix into the crock pot and mix well with the Italian dressing at the bottom of the pot
- Place the chicken back in the crock pot and gently shred the chicken while mixing
- Cook again on a low heat setting until it is heated through
- Serve over noodles or rice
