Ingredients
- 4 chicken breasts
- 1 tsp sea salt
- freshly ground black pepper.
- 2 Tbsps. extra virgin coconut oil
- cup raw, local honey
- 1 cup chopped pecans
- 3 cloves garlic (minced)
- 1 tbsp Italian seasonings
- a dash of ground cinnamon.
- a handful of fresh Italian flat leaf parsley (chopped).
Method
- In a saute pan, add the oil and heat over a medium-high heat
- Use half of the salt and pepper to season the chicken
- Place the chicken in the pan and season the other side of the breasts with the balance salt and pepper
- Slice chicken in a few places and cook each side until slightly golden in color (Approx 3 minutes on each side)
- In a bowl, mix the Italian seasonings, cinnamon, garlic and honey; set aside
- Put the cooked chicken in the crock pot
- Pour the honey mix over the chicken
- Sprinkle the pecans on top
- Cook; 7 to 8 hours on a low heat or 3 ½ to 4 hours on a high heat
- When done, place the chicken on a dish and cover with an aluminum foil
- Allow the chicken to rest for 7 to 10 minutes
- Once the chicken has cooled, shred it and place back in the sauce
- You can serve the beast as a whole with a little sauce drizzled on the top
- Garnish with fresh parsley
