Strawberry Bread Pudding Slow Cooker Recipe

Ingredients

  • 250 g cubed French bread
  • 2½ cups (570 ml) skim milk
  • 2 scalded egg yolks
  • 1 cup (200 g) sugar
  • 1 tsp vanilla
  • 2 tbsps (28 g) unsalted butter, melted
  • 340g strawberries, at room temperature

Method

  1. Place the bread cubes in the slow cooker
  2. Whisk together the milk, egg yolks, sugar, vanilla, and butter
  3. Stir in the berries and pour over the bread cubes
  4. Gently press the bread down into the liquid (do not stir) and cook, covered, on low for 4 to 6 hours
  5. Yield: 6 servings
  6. Per serving: 170 g water; 410 calories (16% from fat, 12% from protein, 71% from carb)
