Ingredients
- 1½ cups (355 ml) water
- 1 cup (192 g) lentils
- ½ cup (80 g) chopped onion
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes, undrained
- 1 tablespoon (20 g) chili sauce
- 2 tbsps (30 g) brown sugar
- ½ teaspoon dry mustard
- 4 slices low-salt bacon, cooked and crumbled
Method
- In saucepan bring water, lentils, and onion to a boil
- Simmer, covered, 30 minutes
- Transfer to slow cooker; stir in undrained tomatoes, chili sauce, brown sugar, and mustard
- Cover and cook on low for 8 to 10 hours
- Uncover; cook on high for 30 minutes
- Stir; top with bacon
- Yield: 6 servings
- Per serving: 159 g water; 88 calories (13% from fat, 20% from protein, 66% from carb)
