Tomato Rice Soup Slow Cooker Recipe

Ingredients

  • 360 g no-salt-added diced tomatoes
  • 1 can (6 ounces, or 170 g) no-salt-added tomato paste
  • 475 ml water
  • ½ cup (50 g) chopped celery
  • 1 cup (160 g) minced onion
  • 1/3 cups (245 g) rice

Method

  1. Put tomatoes, tomato paste, water, celery, and onion into slow cooker
  2. Cook on high for 1 hour and then add rice
  3. Cook for 4 hours more
  4. Yield: 4 servings
  5. Per serving: 346 g water; 142 calories (3% from fat, 12% from protein, 84% from carb)
