Simple Black Bean Chili Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) pork loin, cut in 1-inch (2.5 cm) cubes
  • 520 g low-salt salsa
  • 688 g black beans, cooked or canned without salt
  • ½ cup (120 ml) low-salt chicken broth
  • 1 cup (150 g) chopped red bell peppers
  • 1 cup (160 g) chopped onion
  • 1 tsp cumin
  • 2 tbsps (15 g) chili powder
  • 1 tsp oregano

Method

  1. Brown pork in skillet over medium-high heat
  2. Drain
  3. Combine pork and remaining ingredients in slow cooker
  4. Cover and cook on low 8 to 10 hours
  5. Yield: 8 servings
  6. Per serving: 196 g water; 221 calories (14% from fat, 37% from protein, 49% from carb)
