Ingredients
- 1 pound (455 g) pork loin, cut in 1-inch (2.5 cm) cubes
- 520 g low-salt salsa
- 688 g black beans, cooked or canned without salt
- ½ cup (120 ml) low-salt chicken broth
- 1 cup (150 g) chopped red bell peppers
- 1 cup (160 g) chopped onion
- 1 tsp cumin
- 2 tbsps (15 g) chili powder
- 1 tsp oregano
Method
- Brown pork in skillet over medium-high heat
- Drain
- Combine pork and remaining ingredients in slow cooker
- Cover and cook on low 8 to 10 hours
- Yield: 8 servings
- Per serving: 196 g water; 221 calories (14% from fat, 37% from protein, 49% from carb)
