Chinese Pork Soup Slow Cooker Recipe
Ingredients
- 1 pound (455 g) boneless pork loin roast, cut in ½-inch (1 3 cm) cubes
- 1 cup (130 g) julienned carrots
- ½ cup (50 g) chopped scallions
- ½ teaspoon finely chopped garlic
- ¼ cup (60 ml) low-salt soy sauce
- ½ teaspoon finely chopped fresh ginger
- ¼ teaspoon black pepper
- 475 ml low-salt beef broth
- 4 ounces 115 g mushrooms, sliced
- 1 cup (50 g) bean sprouts
Method
- Cook pork in large nonstick skillet over medium heat for 8 to 10 minutes
- Stir occasionally
- Mix pork and remaining ingredients except mushrooms and bean sprouts in slow cooker
- Cover and cook on low 7 to 9 hours or on high 3 to 4 hours
- Stir in mushrooms and bean sprouts
- Cover and cook on low 1 hour
- Yield: 6 servings
- Per serving: 204 g water; 145 calories (33% from fat, 54% from protein, 13% from carb)
