Ingredients
- 2 tbsps (28 ml) olive oil
- 1½ pounds (680 g) beef round steak, cubed
- 1½ cups (240 g) diced onion
- ½ cup (75 g) chopped green bell pepper
- 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes
- ½ cup (120 g) low-salt ketchup
- 2/3 cup (133 g) pearl barley
- ½ teaspoon pepper
- 1 tbsp (7 g) paprika
- 280g frozen lima beans
- 700 ml water
- 1 cup (230 g) sour cream
Method
- Heat oil in a skillet over medium-high heat
- Brown beef cubes and then add onion and green pepper
- Saute until vegetable begin to soften
- Pour into slow cooker
- Add remaining ingredients except sour cream
- Cover and cook on high 5 hours
- Stir in sour cream before serving
- Yield: 8 servings
- Per serving: 340 g water; 318 calories (29% from fat, 32% from protein, 38% from carb)
