Rice With Beef And Peppers Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) ground beef
  • 1 cup (150 g) coarsely chopped green bell pepper
  • 1 cup (150 g) coarsely chopped red bell pepper
  • 1 cup (160 g) chopped onion
  • 1 cup (190 g) brown rice
  • 700 ml low-salt beef broth
  • 1 tablespoon (15 ml) reduced-sodium soy sauce

Method

  1. Brown beef in skillet over medium-high heat
  2. Drain
  3. Combine beef and remaining ingredients in slow cooker and mix well
  4. Cover and cook on low 5 to 6 hours or on high 3 hours until liquid is absorbed
  5. Yield: 6 servings
  6. Per serving: 260 g water; 245 calories (50% from fat, 28% from protein, 21% from carb)
