Ingredients
- 1 pound (455 g) ground beef
- 1 cup (150 g) coarsely chopped green bell pepper
- 1 cup (150 g) coarsely chopped red bell pepper
- 1 cup (160 g) chopped onion
- 1 cup (190 g) brown rice
- 700 ml low-salt beef broth
- 1 tablespoon (15 ml) reduced-sodium soy sauce
Method
- Brown beef in skillet over medium-high heat
- Drain
- Combine beef and remaining ingredients in slow cooker and mix well
- Cover and cook on low 5 to 6 hours or on high 3 hours until liquid is absorbed
- Yield: 6 servings
- Per serving: 260 g water; 245 calories (50% from fat, 28% from protein, 21% from carb)
