Beef And Zucchini Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) extra-lean ground beef
  • ½ cup (80 g) chopped onion
  • ¼ teaspoon black pepper
  • 480 g zucchini, sliced
  • 1 can (280 g) low-salt cream of mushroom soup
  • 1 cup (110 g) shredded Swiss cheese

Method

  1. In a skillet over medium-high heat, brown ground beef with onions and pepper until no longer pink
  2. Drain
  3. Layer zucchini and beef mixture alternately in slow cooker
  4. Top with soup
  5. Sprinkle with cheese
  6. Cover and cook on low 2 to 3 hours or until the zucchini is done
  7. Yield: 4 servings
  8. Per serving: 281 g water; 454 calories (59% from fat, 29% from protein, 11% from carb)
