Ingredients
- 1 pound (455 g) extra-lean ground beef
- ½ cup (80 g) chopped onion
- ¼ teaspoon black pepper
- 480 g zucchini, sliced
- 1 can (280 g) low-salt cream of mushroom soup
- 1 cup (110 g) shredded Swiss cheese
Method
- In a skillet over medium-high heat, brown ground beef with onions and pepper until no longer pink
- Drain
- Layer zucchini and beef mixture alternately in slow cooker
- Top with soup
- Sprinkle with cheese
- Cover and cook on low 2 to 3 hours or until the zucchini is done
- Yield: 4 servings
- Per serving: 281 g water; 454 calories (59% from fat, 29% from protein, 11% from carb)
