Best Lamb Stew Slow Cooker Recipe

Ingredients

  • 1 pound (900 g) lean lamb
  • 2 tbsps (28 ml) olive oil
  • 1 onion, cut in wedges
  • ½ teaspoon minced garlic
  • 1 can (280 g) low-salt cream of mushroom soup
  • ½ cup (120 ml) water
  • ½ teaspoon thyme
  • 225g fat-free sour cream
  • 2 tbsps (16 g) flour

Method

  1. Cut lamb in 1-inch (2
  2. 5 cm) cubes
  3. Heat oil in a large skillet over medium-high heat and brown meat
  4. Transfer to a slow cooker
  5. Add onion and garlic to skillet; cook until onion is tender but not brown
  6. Stir in soup, water, and thyme, scraping browned bits from bottom of skillet
  7. Pour over lamb in slow cooker
  8. Cover and cook on low for 8 to 10 hours
  9. Turn cooker to high
  10. Thoroughly blend sour cream and flour
  11. Slowly stir 1 cup (235 ml) hot liquid from the slow cooker into the sour cream mixture; return mixture to hot stew
  12. Cover and cook until thickened, 15 minutes
  13. Yield: 6 servings
  14. Per serving: 211 g water; 417 calories (46% from fat, 44% from protein, 10% from carb)
