Ingredients
- 1½ cups (150 g) sliced celery
- 1¼ cup (200 g) chopped onion
- 1 cup (150 g) chopped green bell pepper
- 1 can (8 ounces, or 225 g) no-salt-added tomato sauce
- 1 can (28 ounces, or 785 g) no-salt-added whole tomatoes, broken up
- ½ teaspoons minced garlic
- ¼ teaspoon pepper
- drops hot pepper sauce
- 1 pound (455 g) shrimp, peeled
Method
- Combine all ingredients except shrimp
- Cook 3 to 4 hours on high or 6 to 8 hours on low
- Add shrimp during the last hour of cooking
- Serve over hot rice
- Yield: 6 servings
- Per serving: 293 g water; 139 calories (11% from fat, 50% from protein, 39% from carb)
