Beer Barbecued Meatballs Slow Cooker Recipe

Ingredients

  • 3 pounds (1.4 kg) lean ground beef
  • 1 cup (160 g) chopped onion, divided
  • ½ cup (60 g) dry bread crumbs
  • ¾ cup (175 ml) egg substitute
  • 355 ml beer
  • 175 ml spicy vegetable juice, such as V-8
  • 1 tsp lemon juice
  • 1 tsp hot pepper sauce
  • 390g no-salt-added ketchup
  • 1 tsp horseradish
  • 1 tsp Worcestershire sauce

Method

  1. Combine ground beef, ½ cup (80 g) onions, bread crumbs, and egg substitute
  2. Make the mixture into small meatballs
  3. Cook meatballs in a large skillet, turning to brown all sides, or bake in a 375°F (190°C, or gas mark 5) oven until browned, about 30 minutes
  4. Drain meatballs and discard fat
  5. In a saucepan, combine remaining ingredients
  6. Simmer for 15 minutes
  7. Put meatballs and sauce into slow cooker
  8. Cover and cook on low for 3 to 6 hours
  9. Makes about 6 dozen meatballs
  10. Yield: 36 servings
  11. Per serving: 53 g water; 116 calories (54% from fat, 29% from protein, 17% from carb)
