Ingredients
- 3 pounds (1.4 kg) lean ground beef
- 1 cup (160 g) chopped onion, divided
- ½ cup (60 g) dry bread crumbs
- ¾ cup (175 ml) egg substitute
- 355 ml beer
- 175 ml spicy vegetable juice, such as V-8
- 1 tsp lemon juice
- 1 tsp hot pepper sauce
- 390g no-salt-added ketchup
- 1 tsp horseradish
- 1 tsp Worcestershire sauce
Method
- Combine ground beef, ½ cup (80 g) onions, bread crumbs, and egg substitute
- Make the mixture into small meatballs
- Cook meatballs in a large skillet, turning to brown all sides, or bake in a 375°F (190°C, or gas mark 5) oven until browned, about 30 minutes
- Drain meatballs and discard fat
- In a saucepan, combine remaining ingredients
- Simmer for 15 minutes
- Put meatballs and sauce into slow cooker
- Cover and cook on low for 3 to 6 hours
- Makes about 6 dozen meatballs
- Yield: 36 servings
- Per serving: 53 g water; 116 calories (54% from fat, 29% from protein, 17% from carb)
