Surimi Seafood Spinach Salad Recipe

Ingredients

  • 1 pound surimi seafood — cut or shredded
  • into bite-size pieces
  • 4 cups torn fresh spinach
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup thinly-sliced green onions
  • 1 cup cherry tomatoes — halved
  • 1/2 cup thinly-sliced cucumber
  • 2 tablespoons peanut oil
  • 4 tablespoons unseasoned rice vinegar
  • 1 teaspoon grated fresh ginger
  • (or 1/2 tspn dried ginger)
  • 1 teaspoon soy sauce
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon honey
  • 1/2 teaspoon sesame oil

Method

  1. In large serving bowl, mix together surimi, spinach, mushrooms, green onions, cherry tomatoes, and cucumber
  2. Combine remaining ingredients, mix well and pour over salad
  3. Toss and serve
  4. Garnish with 1 teaspoon sesame seeds, if desired
  5. This recipe yields 4 servings
