Steamed Pollock Gardiniere Seafood Recipe

Ingredients

  • 3 cups Swiss chard leaves — sliced diagonally

OR:

  • 3 cups fresh spinach
  • salt and pepper.
  • 4 pollock fillets (3 to 5 ounce each)
  • 2 teaspoons lemon or lime juice
  • 4 thin lemon slices
  • 4 thin tomato slices
  • 1/4 teaspoon basil — crushed*

Method

  1. Place Swiss chard on a heat-proof dish or directly on steamer rack over boiling water; season chard with salt and pepper
  2. Arrange pollock on chard, sprinkle with lemon juice, salt and pepper
  3. Place a lemon slice and tomato slice on each portion; sprinkle with basil
  4. Return water to boil; steam about 10 minutes or until chard is tender and fish flakes when tested with a fork
