Ingredients
Makes 5 cups – Cooker: 5- to 7-quart – Time: 2 minutes at HIGH pressure
- 2 pounds apples (4 to 5 large apples), peeled, cored, and cut into wedges or chunks
- 10 medium red or black plums (1¼ to 1½ pounds), cut in half, stoned, and sliced or chopped
- ½ cup water
- 1/3 cup sugar
- grated zest and juice of 1 lemon
- 2 to 3 tablespoons orange marmalade (optional, but oh so good)
Method
- In a 5- to 7-quart pressure cooker, combine the apples, plums, water, sugar, and lemon juice and zest
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 2 minutes
- Remove the pot from the heat
- Open the cooker with the Natural Release method; let stand for 15 minutes
- Be careful of the steam as you remove the lid
- With an immersion blender, puree the sauce in pot to the thick and chunky or smooth consistency you prefer
- If using, stir in the marmalade while the sauce is still hot
- Use immediately or let cool completely and store in an airtight container in the refrigerator up to 5 days or in the freezer up to 1 month
