Plum Good Applesauce Pressure Cooker Recipe

Ingredients

Makes 5 cups – Cooker: 5- to 7-quart – Time: 2 minutes at HIGH pressure

  • 2 pounds apples (4 to 5 large apples), peeled, cored, and cut into wedges or chunks
  • 10 medium red or black plums (1¼ to 1½ pounds), cut in half, stoned, and sliced or chopped
  • ½ cup water
  • 1/3 cup sugar
  • grated zest and juice of 1 lemon
  • 2 to 3 tablespoons orange marmalade (optional, but oh so good)

Method

  1. In a 5- to 7-quart pressure cooker, combine the apples, plums, water, sugar, and lemon juice and zest
  2. Close and lock the lid
  3. Set the burner heat to high
  4. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  5. Set a timer to cook for 2 minutes
  6. Remove the pot from the heat
  7. Open the cooker with the Natural Release method; let stand for 15 minutes
  8. Be careful of the steam as you remove the lid
  9. With an immersion blender, puree the sauce in pot to the thick and chunky or smooth consistency you prefer
  10. If using, stir in the marmalade while the sauce is still hot
  11. Use immediately or let cool completely and store in an airtight container in the refrigerator up to 5 days or in the freezer up to 1 month
