Cheesy Lentil Tacos Pressure Cooker Recipe

Ingredients

SERVES 4 to 6 as a side dish – Cooker: 5- to 7-quart – Time: 9 minutes at HIGH pressure

Serve with Chipotle Style Lime and Cilantro Rice

  • 1 to 2 tablespoons olive oil, as needed
  • 1 cup chopped white onion
  • 2 cloves garlic, chopped
  • 3 teaspoons chili powder
  • 1 teaspoon dried oregano, preferably Mexican
  • 1 cup dried brown lentils, picked over and rinsed
  • 2½ cups low-sodium vegetable or chicken broth
  • sea salt (optional)

FOR SERVING:

  • 12 soft corn or multi-grain tortillas
  • sour cream or plain greek yogurt
  • 2 cups shredded extra-sharp Cheddar cheese
  • shredded lettuce
  • chopped fresh cilantro
  • salsa fresca

Method

  1. Turn one of your stovetop burners on low
  2. Place a tortilla on top of the grate and cook for about 20 seconds per side or until it is browned to your liking
  3. Heat up a dry, heavy skillet (cast iron works great) over medium-high heat
  4. Place a tortilla in the hot skillet and heat until browned to your liking on both sides
  5. In a 5- to 7-quart pressure cooker heat the oil over medium heat
  6. Add the onion and garlic and cook, stirring a few times, until soft, 1 to 2 minutes
  7. Add the chili powder and oregano and stir until fragrant
  8. Add the lentils and broth
  9. Bring to a boil
  10. Close and lock the lid
  11. Set the burner heat to high
  12. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  13. Set a timer to cook for 9 minutes
  14. Remove the pot from the heat
  15. Open the cooker with the Quick Release method
  16. Be careful of the steam as you remove the lid
  17. If they are not quite tender, relock the cooker, bring back up to HIGH pressure, and cook for 1 to 2 minutes longer
  18. If too wet, simmer the lentils, uncovered, to evaporate the liquid but take care not to overcook
  19. Add a pinch of sea salt per cup of lentils if you wish
  20. If using right away, top with some of the cheese and let it melt
  21. When ready to serve, heat up the tortillas
