Ingredients
- a piece of beef shank.
- 1 stick of chourico
- 1/2 lb. split peas
- 1/2 stick margarine
- 1 head cabbage, cut sm.
- 1 Escarole, cut sm.
Method
- Combine in large pot of water and boil until beef is tender
- Wash Escarole well
- Add potatoes, margarine, cabbage
- Cook until cabbage goes down
- Then add Escarole
- Cook about 1 hour, then salt and pepper to taste
- A piece of beef shank
