Portuguese Soup Calding Recipe

Ingredients

  • a piece of beef shank.
  • 1 stick of chourico
  • 1/2 lb. split peas
  • 1/2 stick margarine
  • 1 head cabbage, cut sm.
  • 1 Escarole, cut sm.

Method

  1. Combine in large pot of water and boil until beef is tender
  2. Wash Escarole well
  3. Add potatoes, margarine, cabbage
  4. Cook until cabbage goes down
  5. Then add Escarole
  6. Cook about 1 hour, then salt and pepper to taste
  7. A piece of beef shank
