Ingredients
- 1 lb. stew beef (cut into 1-inch cubes)
- 1/2 lb. linguica or chourigo (cut into slices) (Portuguese sausage)
- 1-2 qt. water
- dash of salt.
- 3 lg. potatoes, cubed
- 3 carrots, cubed
- 1 bunch kale, chopped, or 1 pkg. frozen kale, defrosted
- 1/2 cabbage, chopped
- 1/2 pkg. elbow macaroni
- 1 can white kidney beans (optional)
Method
- Peel and cut up potatoes and carrots
- Add salt, meat and Portuguese sausage to the pot of water
- Simmer and cover until meat and sausage is almost tender
- Then add carrots, beans, cabbage and kale
- Cook for 45 minutes or until kale is cooked (keep covered)
- Add potatoes and elbow macaroni
- Occasionally stir the soup so that the potatoes and macaroni won’t stick to the bottom of the pan
- Simmer and keep covered until potatoes and macaroni are cooked
