Ingredients
Serves 6
- 6 large eggs
- 3/4 cup heavy cream
- 1/2 cup half-and-half
- 2 tsps. chopped fresh dill
- 1/2 lb. cooked Maine lobster meat (about one 1 1/2 lbs. lobster), coarsely chopped
- 1/4 lb. brie, cut thinly into 1-inch pieces
Method
- Preheat the oven to 400 degrees F
- Butter 6 individual custard cups or ramekins, place onto a baking sheet and set aside
- Whisk together the eggs, heavy cream and half-and-half in a large mixing bowl
- Stir in the dill
- Fill each of the cups half full with the egg mixture
- Divide the lobster and brie evenly among the cups
- Top each cup with the remaining egg mixture
- Bake until puffed and just beginning to brown, 15-20 minutes
- Serve immediately
